Blessed by an excellent vintage in the Toro D.O., San Román 2022 is made entirely from Tinta de Toro grapes. The grapes come from vineyards located in the municipalities of San Román de Hornija, Villaester, and Morales de Toro, on stony and sandy-clay soils. A 22-month aging process in new and used 225- and 500-liter French and American oak barrels results in a powerful and elegant wine. San Román Bodegas y Viñedos emerged in the late 1990s when winemaker Mariano García, having left Vega Sicilia, decided to embark on a project in the Toro D.O., applying the same philosophy that had led him to success with Bodegas Mauro (V.T. Castilla y León). Mariano García brought his sons Eduardo and Alberto into the San Román project and transformed it into one of the most attractive wineries in the Toro D.O. San Román 2022 (D.O. Toro) is ideal to accompany some La Granja beans and also some breaded sweetbreads; it even harmonizes wonderfully with a chocolate cake.
