Tasting Notes
Appearance
This Chilean red wine displays a particularly dark hue, bordering on black at its core. In its youth, this highly concentrated wine reveals subtle bluish and purple highlights.
Nose
Rich and complex, the bouquet unfolds in layers. It initially reveals intense aromas of ripe black fruit, such as blueberry, blackcurrant, and wild blackberry. These are interwoven with floral notes of dried rose and patchouli, enhanced by hints of graphite, licorice, sweet spices, and sandalwood.
Palate
The attack is broad and the texture silky. The palate is driven by vibrant acidity and fine, tight-knit tannins that lend great energy to the wine. Fruit, spice, and wood flavors extend into a long, persistent finish, marked by a refreshing touch of menthol.
Food Pairing
This exceptional wine pairs beautifully with grilled or roasted red meats, such as Wagyu beef or lamb crusted with Herbes de Provence. It also excels alongside slow-cooked dishes in rich sauces and aged hard cheeses. Thanks to its vegan certification, it is equally well-suited to sophisticated plant-based cuisine, such as a wild mushroom risotto.
Serving and Cellaring
To fully appreciate this vintage, decanting for about an hour before serving is recommended, ideally at a temperature between 16°C and 18°C. With excellent aging potential, it can be cellared and will continue to improve until approximately the mid-2030s.
