80% whole cluster fermentation. No added yeast or enzymes. Cold pre-fermentation maceration (12-15°C) for 5 days. Total maceration: 17 days. One punch-down per day until halfway through fermentation, then one light pump-over per day until the end of vatting. Pressing with a vertical press.
