These are Japanese chisel (Nomi 鑿). The difference between Western chisels and Japanese chisels is that while Western chisels are double-edged, Japanese chisels are single-edged. Single-edged chisels are better suited for fine work and are specialized for carving compared to double-edged chisels. Additionally, the Japanese steel used in katana and Japanese kitchen knives is also used in Japanese chisels. The blades are known for their long-lasting sharpness if properly maintained. Japanese carpenters often have chisels that have become well-worn and comfortable in their hands over many years of use.
