We have ascertained that the oldest vineyards destined to produce this wine are Carmenere, while only the most recent plantings are Cabernet Franc. For this reason, on the label we only use the term "Cabernet," which summarizes the two varietals and is permitted by the DOC in this situation. It is aged for one year in stainless steel on the lees, with the aim of softening the rough edges of its impetuous character.
