Distilleria: Neisson Edizione: The last one Vintage 2005 The Neisson distillery is located in Carbet , Martinique . It was founded in 1932 by the Neisson brothers. Jean, a chemical engineer by training, dedicated his professional life to improving distillation techniques. Jean's descendants, Claudine and then her son Grégory, took up the family torch. The transition to organic farming began in 2013, and in 2016, the first organic rum AOC Martinique was offered to consumers. Gradually, the entire land, over 40 hectares, underwent the same evolution. After years of research, Neisson uses its own indigenous yeast strains , selected from those naturally present on the distillery's barrels. Careful selection of crop varieties to adapt to the typology of each plot, controlled irrigation to conserve water, and efficient wastewater treatment: today, everything contributes to the production of high-quality agricultural rums in harmony with the ecosystem of the Neisson lands.
