VINIFICATION
The grapes are sorted by hand before undergoing destemming and an automated berry selection process. They are then gently crushed before being transferred to the fermentation vats where they are inoculated with a specially selected yeast culture and fermented at 25C. During fermentation, the wines are gently macerated in order to produce an earlier drinking wine but with the ability to mature in bottle.

TASTING NOTES
Post Scriptum is a partner wine to Chryseia, drawn from the same vineyards. Its profile is similar, with expressive, fresh and concentrated fruit married to exquisite balance and elegance. Lighter oaked, it is ready to enjoy at a younger age.

SERVING
Ready for immediate consumption, although the wine has the potential to continue developing favourably in the bottle. It goes well with red and white meats and cheeses. Store in a horizontal position, in a cool and dry place, protected from light and temperature fluctuations. Serve at a temperature between 16ºC and 18ºC. Consume in moderation.

HISTORY
Prats & Symington was founded in 1999 as a joint venture between the well known Bordeaux winemaker, Bruno Prats and the Symington family. It is an independent company specialising in dry red wines which has been at the forefront of the DOC Douro quality revolution and instrumental in driving forward the high quality image of the region.
The Symingtons of Scottish, English, and Portuguese descent have been port producers in northern Portugal since 1882. Today, 10 members of the family work side-by-side across their four historic port houses – Graham’s, Cockburn’s, Dow’s, and Warre’s – and their still wine portfolio. They own 27 different vineyards across the Douro, Alentejo, and Vinho Verde regions, with a total of 1,140 hectares under vine, and are committed to pushing the boundaries of sustainable viticulture and winemaking.
The Prats family comes from a line of Bordeaux Château owners and at one time owned Château Margaux. Bruno Prats was co-owner and winemaker at Cos d’Estournel for 30 years. His son, Jean-Guillaume, was CEO of Cos d’Estournel for 10 years, and spent five years as CEO of Château Lafite, Château L'Évangile, and Château Rieussec. In addition to the Prats + Symington partnership, the Prats are partners at Klein Constantia in South Africa and Viña Aquitania in Chile.
