The Neisson distillery, founded in 1931 by Adrien Neisson, began with the vision of a mulatto merchant from Saint-Pierre in the northern Caribbean. He purchased 20 hectares of the Thieubert estate in Le Carbet and planted the first sugarcane to produce rhum agricole. His younger brother, Jean Neisson, studied chemical engineering at the École Supérieure de Chimie in Paris and contributed to the renown of their products. The distillery was built entirely from scratch using rubble and stones from the estate, and the first Mariolle Five Lille mills and a second-hand Babcock boiler from 1886 were acquired. Jean Hildevert-Pamphile introduced a slow fermentation process using yeasts harvested from his own sugarcane, strengthening the connection to the terroir.
