Beer of spontaneous fermentation, for which only PaleAle malt is used.


The Iris is the result of the fusion of two flavors that were very present in our beer until the middle of the twentieth century: the sour taste comes from spontaneous fermentation while the use of fresh hops, followed by cold hops, provides the bitter touch.

Vigneronne 2023

Mixture of Lambik with an average age of 16 to 18 months and organic viognier grapes.

The viognier grapes make this Vigneronne a delicate and very fresh beer. Thanks to the fructose of the grapes, it is slightly less acidic than the other beers of Cantillon.

Mixture of Lambik and blue honey berries (or haskap berries).

For two years we have been producing a small amount of Lambic with maceration of camerises, a small fruit with a slightly sweet taste and beautiful acid notes.

Since the fruit of the blue honeysuckle produces a blood red colored beer, the new name for this beer was obvious: Sang Bleu. Our friend Ammo has once again spoiled us with a beautiful label for this new product.

Mixture of Lambik with an average age of 16 to 18 months and merlot grapes.

This latest blend, bottled in November 2022, was exceptionally made with Merlot (55%), Grenache Noir (35%) and Syrah (10%) grapes.

Lambik is rightly considered the missing link between the world of wine and that of beer. With its grapes intended for wine production, the Saint Lamvinus will only strengthen this bond.

Beer with an intense fruity flavor and a beautiful, long finish reminiscent of the common origin with the wine.
