Distillery: Tequilera La Tequileña

Region: Tequila Valley, Jalisco, Mexico
Cooking: Autoclave (low pressure)
Removal: Roller mill and screw mill
Fermentation: Outdoor fermentation in stainless steel tanks, using natural spring water.
Distillation: Double distillation; three-quarters of the distillate is obtained in a copper double column still whose plates have been removed to achieve a lower alcoholic content, and the remaining quarter in a copper still.
Alcoholic Graduation (ABV): 43% (86 grades)
Aroma: Seductive scents of soft red fruits, dried sweet cherries and vanilla, with subtle notes of red wine that contribute to its aromatic complexity.
Taste: A harmonious blend of cooked agave, raisins in the sun, crispy red apples and warm vanilla, complemented by oak tannins that bring depth to the palate.
Feeling in the mouth:
Bodied and soft, it offers a rich and satisfying texture that lasts pleasantly, giving way to a sweet and full finish with a dry and tannic finish.
The aging process:
This extra aged tequila was aged for eight years in a combination of barrels: a quarter in American white oak previously used for Californian red wine and three quarters in dark French oak used. The barrels were stored in a humid climate cellar, originally a water cistern from the early 20th century, which provided a cooler environment with less interaction with wood, allowing for slow and nuanced maturation
