It is an ancient French cast iron press bearing the manufacturer’s mark CF ... Camion Freres, founded in 1820 in Vivier au Court... used to prepare the recipe for pressed duck (Canard à la Presse)...
This kitchen utensil originating from Rouen in the 19th century is used to extract blood and marrow from the duck carcass. The extracted liquid is then used to create a sauce that accompanies the bird's meat.
The main body is made of cast iron, while the inner container is likely perforated metal, such as aluminum and steel, and the outer tray for collecting the liquid is enamelled blue.
These outlets are considered collectible objects and are used in some luxury restaurants for special occasions.
The dish and the utensil were made famous by the Parisian restaurant La Tour d'Argent, which still today is known for a signature dish.
