This lot features four traditional Japanese Deba knives, all vintage, hand-forged, and signed, representing the craftsmanship of regional Japanese blade-making traditions.
Deba knives are essential tools in traditional Japanese cuisine, specifically designed for fish preparation—filleting, beheading, and cutting through small bones—requiring both weight and sharpness. Each knife in this set reflects that purpose through its robust spine and finely tapered edge.
All four knives bear authentic engraved signatures, reading from left to right:
“Higashi Masamune saku” (東正宗作)
“Hana Yoshinaga” (花義長)
“Ibuki Sekimago Dai” (伊吹 関孫大)
“Noshu Magoroku saku” (濃州孫六作)
Approximate blade lengths (measured from heel to tip):
Knife 1 (Left) – Higashi Masamune saku (東正宗作)
Blade length: approx. 165 mm
Knife 2 – Hana Yoshinaga (花義長)
