Zacapa XO is an ultra-premium rum made from a blend of rums aged between 6 and 25 years, with additional ageing in French oak barrels previously used to age cognac, revealing aromas of cherries and spices. Instead of molasses, Zacapa uses ‘virgin honey’, obtained from the first pressing of sugar cane, and subjects it to an exclusive ageing process called Solera, storing it in barrels previously used to age American whiskies, Sherry and Pedro Ximénez wines, and cognac. The secret of Zacapa is its slow ageing in the cold lands of the Guatemalan highlands, at an altitude of 2,300 metres, which provides a final balance between the aromas and flavours extracted during the process.
