Vintage Japanese Deba Knives – Set of 3
Traditional Single-Bevel Fish Knives, Fully Signed
This listing presents a set of three vintage Japanese deba knives, traditionally used for fish preparation, including filleting, cutting through small bones, and head processing. All knives are single-bevel, reflecting authentic Japanese craftsmanship intended for professional kitchens.
Blade & Maker Details (from left to right):
Left knife:
Signed 「登録 藤吉郎作」 (Registered, made by Fujikichirō).
Center knife:
Signed 「登録 仙蔵上作」 (Registered, Senzō – superior work).
Right knife:
Signed 「風神別作」 (Fūjin – special make).
The wooden handle is also branded with 「堺風神別撰」 (Sakai Fūjin – specially selected).
The ferrule bears an original Sakai Cutlery Cooperative Association label, further supporting authenticity.
