Set of 3 Vintage Traditional Japanese Deba Knives – Signed Blades – Sakai & Echigo Tradition

Offered here is a refined set of three vintage traditional Japanese Deba knives, all signed and representing respected regional blade traditions. These are single-bevel fish butchery knives designed for filleting, breaking down whole fish, and cutting through small bones with precision.

Each knife carries a clear maker’s mark, adding collectible and historical appeal.

Blade length: approx. 15–16 cm
Total length: approx. 29–30 cm

A classic Deba signed “Kagemitsu.”
The blade features a traditional thick spine and solid heel geometry, suitable for professional fish preparation.

2) “Echigo Tamasaburo” (越後 玉三郎)

Handle label: “Registered – Made by Tamasaburo – Stainless Steel” (登録 玉三郎作 ステンレス製)

Blade length: approx. 15–16 cm
Total length: approx. 29–30 cm

A Deba from Echigo tradition, bearing both blade signature and original handle label.
Notably marked as stainless steel construction, making it more resistant to corrosion compared to traditional carbon steel blades.

3) “Sakai Hokushin” (堺 北辰)

Blade length: approx. 16–17 cm
Total length: approx. 30–31 cm

A Deba signed “Sakai Hokushin,” connecting it to the historic Sakai blade-making region, internationally recognized for its craftsmanship.
The blade shows a well-balanced profile ideal for controlled fish processing.
