SABA
The “Saba,” the Emilian name for cooked grape must, is a fresh product used in these lands since ancient Roman times. Local grape must is cooked openly for many hours, concentrating it until it becomes particularly sweet and thick. Traditionally it pairs with cheeses and, due to its sweetness, has been rediscovered in pastry for use on ice cream, creams, and ricotta-based desserts.
WHITE SWEET VINEGAR (AGRODOLCE BIANCO)
Giusti White Agrodolce is born from the soft pressing of Trebbiano grapes, from which a particularly sweet juice is obtained. This is then blended with high-quality white wine vinegars and aged in French oak and ash barriques.
