Its name recalls the legendary and legendary Benedictine monk of the 1600s to whom tradition traces the invention of Champagne and is still produced in the historic Benedictine abbey of Hautvillers. The modern history of the Dom Perignon Champagne began in 1936, when Robert-Jean de Vogue, president of the fashion house Moet & Chandon, decided to create an unrivaled bottle, selecting the best reserves from the 1921 vintage. Since then the Dom Perignon has always been was a Millesimato Champagne produced only in the best vintages. Production today is followed and directed, from the vintage to the marketing, by chef de cave Richard Geoffroy, considered as one of the best masters in the art of assembly. The grapes for the production come from the Grand Cru owned by the Maison, which is joined by a part of Pinot Noir grown in the vineyards of the Hautvillers abbey, classified as Premier Cru. Vinification takes place in steel, with complete malolactic fermentation, and aging on the lees in the bottle lasts for over 6 years. All this to create a bubble with body, complexity, structure and above all class, with an aging potential of over 30 years. Each bottle represents a unique and prestigious piece and no vintage is the same as the other, always confirming itself as one of the most significant and emblematic oenological expressions in the world. Right from the olfactory approach, the Vintage Brut Dom Perignon Champagne is intense, rich and complex, with a typical minerality in the foreground accompanied by a symphony of candied fruit, citrus fruits, honey, toasted spices and much more. Slowly the notes due to Chardonnay grapes are revealed, pleasantly buttery, warm and enveloping. On the palate it reveals an impeccable balanced, played between the creamy finesse of the bubbles, the roundness of the body, the mineral freshness of the terroir and the richness of the taste, always noble and composed, never over the top. In short, this is a label of historical relevance and of the highest quality level: a magic that never ceases to amaze and which contains the secret charm of that first cuvée developed by Abbot Pierre Perignon in the distant 1668.
