Season 18/19
bottling date: 30/07/2019
This particular Strawberry/Cherry has a final fruit intensity of 665 grams per litre, based on a ratio of 75% organic strawberries from Ferme Framboos and 25% cherries. All macerations took place in the barrel.
3 Fonteinen Aardbei/Kriek is obtained through a consecutive maceration of strawberries and cherries. First, a short maceration with strawberries takes place, after which the strawberry lambic is used as the base for a second maceration with cherries. In this way, the distinctive fruity character of strawberries is combined with the round mouthfeel of the cherries.
The resulting fruit lambic is then further blended with young lambic for continued fermentation in the bottle.
Naturally sourced fruit, with no added juices, syrups, or sugars.
Season 20/21
bottling date: 05/01/2021
For this Aardbei/Kriek, we blended three quarters of a foeder-matured strawberry lambik (the one we bottled straight away for the 6th blend of this season) and one quarter of a kriekenlambik that macerated for 10 months. The weighted average maceration period is almost four months. The final fruit intensity is at 600 grams of red fruits per litre of Aardbei/Kriek. We bottled it without adding any additional lambik.
