Today, it is one of the world's last traditional distilleries, with little presence on European markets. Beenleigh produces its rums from molasses and local water. It is a ‘Single Blended Rum’, produced using an original technique that is ‘reversed’: distillation takes place first in a column, then in a pot still. The pot still is called ‘The Old Copper’, and is similar to those used by Demerara. The rums are then aged in large wooden vats and old bourbon casks.
Alongside its official bottlings, Beenleigh has begun a collaboration with La Maison & Velier, with two releases in 2021. This new reference is completely unique in the Australian rum landscape. The distillery has two ageing cellars: one close to the distillery and a second in the south of the country, at Renmark in the Barossa Valley, a semi-desert environment.
2013
This 2013 was aged for 10 years in ex-bourbon casks in the tropical climate of the Beenleigh warehouse, with a total angels' share of over 25% and bottled at a high proof of 59%.

This tropical-aged 2006 vintage was first distilled in the column before a second distillation in the pot-still. After 15 years in old wooden vats, this rum has developed fine aromas of nuts, citrus and caramel.

This 2015 vintage, like the 2006, was first distilled in column distillation before a second distillation in pot-still. The difference lies in the use of casks to age the rum, as this vintage spent 5 years in ex-bourbon casks (a single run), giving it more toasty notes of coconut and almond.
