Planteray Single Cask Fiji 2009 is a limited edition single cask rum from the Rum Co. of Fiji, matured in ex-bourbon casks and then in peated Kilchoman Scotch whisky casks. It combines the tropical fruitiness of Fiji with the delicately smoky elegance of Scotland – the result is an unforgettable collector’s item for both rum and whisky lovers.
This exceptional rum comes from the Rum Co. of Fiji distillery, known for its use of column and pot still distillation and relatively long molasses fermentation. The distillery is known for its close cooperation with the Planteray brand. It produces rums for their core range of Plantation Isle of Fiji rum but also supplies them with barrels with unmistakable character, which are released as part of the Single Cask series. This rum was distilled in 2009 from molasses, which underwent a 4-5 day fermentation. A blend of pot still and column still rums was placed in the barrel. It was first matured for 9 years in ex-bourbon barrels in the tropical climate of the South Pacific. It was then transported to France, where it underwent a continental maturation process for 2 years and 4 months in Ferrand barrels, and finally spent another 4 years and 6 months in Kilchoman peat whiskey barrels - a smaller artisanal distillery on the Scottish island of Islay. The total maturation period is therefore a respectable 15 years and 10 months.
It is this final phase of maturation within the Barrel Swap concept, when Alexandre Gabriel exchanged barrels with the Kilchoman distillery, that gave the rum its unexpected character - it combines the depth and complexity of honest rum with the smoky signature of peat whiskey. On the palate it is rich, oily and layered, with notes of caramel, orange peel, chocolate and a subtle tar. The 55% alcohol strength underlines its authenticity and preserves its original texture, making it feel raw yet sublime.
