Although discreet, Eau-de-Vie de Vin is a magnificent ambition of Baron Philippe, who wanted to perpetuate the ancestral tradition of making fruit spirits on the estate. At the time, thanks to his status as a ‘bouilleur de cru’ and the expertise of the cellar master, a singular, exceptionally flavoursome eau-de-vie was born, worthy of its name and of a terroir that reveals itself once again, differently but always with the same sumptuousness. Formerly known as Eau de Vie de Marc d'Aquitaine de Mouton Rothschild, Eau-de-Vie de Vin de Mouton Rothschild is crafted and matured with the same care and precision as the Grands Vins. From generation to generation, the cellar masters have passed down the know-how of the Eau-de-Vie like a secret. Rigorous selection of a batch of grapes from the harvest, coupled with a double distillation process in a copper still, ensures that the best aromas are expressed. The Eau-de-Vie de Vin is then aged in oak barrels for between fifteen and thirty years, before a meticulous process of blending eaux-de-vie from different years gives it its unique character, unique to Mouton Rothschild. Today, each bottle of Mouton Rothschild Eau-de-Vie de Vin is numbered and presented in a precious wooden case. It remains an exclusive product, produced in very limited quantities.
