This is the first release of a Clairin that, exceeding 4 years of aging, turns into Rum Vieux. Originally from the Grand Terroir of St Michel de L'Attalaye in Haiti, this Pure Single Rum is made from 100% Cristalline sugar cane, one of the best ancient varieties, and is aged entirely in the tropical climate of Port-Au-Prince. It is the result of a blend of 12 Ex-Caroni and Ex-Single Malt Scotch Whisky barrels aged for 4 years. Turning into real Rum, it loses the primary characteristics of Michel Saious's Clairin, to enrich itself with a new aromatic profile typical of aged rums The distillation still, built by Michel Sajous, is heated by the fire of bagasse, the cane fibre squeezed and dried in the sun.
