If you want to taste the true expression of agricultural rum, then you have to try J.M. Rum, produced by the distillery of the same name on the island of Martinique which, for three generations, has been immersed in sugar cane plantations considered by all to be the best thanks to the special microclimate generated by the Mont Peléè volcano. Made exclusively from fermented cane juice without any added sugar or caramel, this rum is aged, for at least 10 years, in barrels previously containing Bourbon, in Macouba, Martinique, close to the sea and at the foot of the volcano. Round, harmonious and perfumed, fragrance and power combine in an aromatic explosion with the intense flavours of sugar cane and tropical fruit.
Amber in colour, the nose shows great maturity with candied fruit, nuts, candies and quintals of spices. Puffs of tobacco and cinnamon lead to a tasty and intense finish with hints of flowers, herbs, mint, caramel, cherries in spirit and vanilla nuances. The palate is ample, very warm, but the alcohol component is well modelled and mitigated by spices and sweetness that smoothen the sensation. The finish is excellent and of infinite persistence, bringing back to the palate a symphony of spicy, floral and savoury flavours.
Given its complexity, it is recommended to be consumed neat, without ice, to allow its intense aroma and taste to come to the fore.
