The Riserva is produced only in the best years and the reduced quantitative production means that this wine is often a single vineyard. In cooler and rainier years, the vineyards that are most likely to produce Riserva grapes are those located between 300 and 400m above sea level where the soil is looser, rich in skeleton and organic substance, while in hot and dry years, the lower plots are to be preferred, between 180 and 250m above sea level, rich in clay and galestro, capable of maintaining greater freshness and balance in the maturation of the grapes.
