Over the years, Giovanni Canonica has rightfully earned the status of being almost impossible to find. His wines, the Barolo crus Paiagallo and Grinzane, along with the so-called “entry-level” labels are, each vintage, among the most sought-after in the Langhe by lovers of true, artisanal wine: wines of the highest territorial expressiveness. They are hard to come by because, with just over two hectares of vineyards, production never exceeds 6,000–7,000 bottles per year—a very small number considering how loved and sought-after this great Barolo artisan is. Certainly, beyond and even before the birth of a myth, there is a foundation of great substance. Canonica has always, without “chasing” trends or media exposure, embraced agricultural and winemaking principles that in the Langhe can undoubtedly be considered among the most rigorous and consistent in terms of naturalness and authenticity of both the work and the product. Everything always begins—and with Canonica more than anyone else—with (natural) care in the vineyard. The wines, after meticulous selections, gestures, and painstaking attention between vineyard and cellar, become masterpieces of agricultural integrity: deep, dynamic, alive. Paiagallo, from the cru of the same name, has for a couple of decades now been one of the most iconic and sought-after Barolos—and wines more broadly—on both the Italian and international scenes. A monumental nectar, never the same as itself, yet always unmistakably itself, vintage after vintage. Compelling in its narration of land and territory, of sand and limestone, of brambles and wild red fruits, of sweat, history, and undergrowth. Drinking it is a rare and extreme pleasure for all the senses— including the seventh.
