Raphaëlle Guyot initially intended to pursue a career in winemaking entirely different from that of a winemaker before changing course. She completed a BTS (Advanced Vocational Diploma) in viticulture and oenology in Beaune and then learned the essentials elsewhere, notably from her friend Cyril Fhal. Settled on the border between Burgundy and the Sancerre and Pouilly-Fumé vineyards, she gradually acquired more or less abandoned plots of land (many of which had been uprooted), whose qualities were praised in old documents. Les Hâtes is a pure Pinot Noir (from a plot planted in 2003 and discovered under brambles in 2018!), macerated for fifteen days with whole bunches for half the time and aged for five months in barrels.
