2021 Bibi Graetz, Testamatta - Toscane IGT - 6 Bouteille (0,75 l)
This Rosso “Testamatta” is made from pure Sangiovese grapes from old vines, around 80 years old. Trained using the Guyot and spurred cordon systems, they grow in the clay- and marl-rich soil surrounding the town of Fiesole. Vinification takes place in barriques, where the must ferments spontaneously thanks to the presence of indigenous yeasts, with 6-8 manual punching downs performed daily at regular intervals. The subsequent maturation lasts two years and takes place in French oak barriques, a small portion of which, approximately 10%, is new.
