Wine vinegar is an aged product that matures for a long time in large oak barrels, which soften its pungency and over the years impart intense aromas and woody notes.
SABA
The 'Saba,' an Emilian name for cooked must, is instead a fresh product that has been used in these lands since ancient Roman times. The must from local grapes is cooked outdoors for many hours, concentrating until it becomes particularly sweet and dense. Traditionally paired with cheeses and, due to its sweetness, has been rediscovered in pastry for use on ice creams, creams, and ricotta-based desserts.
White sweet and sour
Giusti White Sweet and Sour is born from the gentle pressing of Trebbiano grapes, which yields a particularly sweet juice. This is then blended with high-quality white wine vinegars and aged in barrels of French oak and ash. This process preserves the most fruity and floral aromas of the grape variety, creating a very pleasant condiment thanks to the contrast between low acidity and the sweet notes of dried yellow fruits and citrus.
