This are a 3 Torah scrolls, a handwritten copy of the first five books of the Hebrew Bible (the Pentateuch). The scrolls appears to be an antique fragment.
Torah scrolls are written in Hebrew by a qualified calligrapher on vellum or parchment made from the skin of a kosher animal.
The text is the five Books of Moses: Genesis, Exodus, Leviticus, Numbers, and Deuteronomy.
The scroll in the image appears to be an old over then a 100 years.
