Vintage Japanese Deba Knife Set – “Masayoshi” & “Nōshū Magoroku” Signed Traditional Wa-Bocho – Hand-Forged Fish Butchery Knives – Japan

A compelling pair of vintage Japanese Deba knives, crafted in the traditional Wa-bocho style for fish preparation and precise butchery work.
Both knives bear engraved maker’s signatures and embody the restrained beauty and practical philosophy of classic Japanese kitchen tools.

Unlike decorative reproductions, these knives show the honest traces of long-term use and maintenance in a working kitchen. Their aged surfaces, softened patina, and visible sharpening history give them a distinctly authentic character that modern factory knives rarely possess.

The larger knife is signed “Masayoshi” (正与志), featuring a robust and powerful profile suitable for fish breakdown and heavier cutting tasks.
The second knife is signed “Nōshū Magorokusaku” (濃州孫六作), a respected traditional name associated with the historic blade-making region of Mino/Nōshū in Japan.

Both are single-bevel Japanese knives, intended for right-handed use.
