Brasserie Cantillon x Cantina Giardino – Drogone Lambic (75 cl)
Brasserie Cantillon
Drogone Lambic is a rare and highly original collaboration between the legendary Brussels-based Brasserie Cantillon and the Italian natural wine estate Cantina Giardino.
This experimental and expressive blend combines 3-year-old spontaneously fermented lambic with Aglianico grape pomace, previously macerated for three months in chestnut barrels. The result is a hybrid creation that bridges the worlds of traditional Belgian lambic and southern Italian natural wine.
The addition of Aglianico (around 300 g/L of grapes used) brings a distinctive vinous dimension: structure, dark fruit depth, and aromatic complexity, layered over the classic Cantillon acidity and wild fermentation profile.
Tasting profile
Drogone offers a highly evolving aromatic profile:
* ripe red cherry, blackberry and plum from the Aglianico
* citrus zest and green apple from the lambic base
* earthy, funky, and barnyard notes typical of spontaneous fermentation
* subtle woody and chestnut influence from barrel aging
On the palate, it is dry, vibrant, and sharply structured, with a complex interplay between sourness, fruit richness, and tannic grip from the grape skins. The texture is unusual and layered, combining beer acidity with vinous structure.
Aging potential
This is a living beer designed for evolution. It can develop significantly over time, gaining oxidative depth, dried fruit notes, and increased complexity over the next decade.
