Cappellano Capovilla - Grappa di Barolo - 500ml

A winemaker’s curiosity meets the talent of a master artisan. That is how our grappa came to be: born from a desire to elevate the often-overlooked parts of our vineyard’s grapes and the decision to entrust them to the sensitive touch of Gianni Capovilla. For us, the experience was akin to a journey to the “dark side of the moon,” discovering the hidden value of the fruit we cultivate. Capovilla—in our view, the ideal distiller to extract the best from the post-fermentation grape remnants while preserving their purity—ages the spirit in cold conditions throughout the winter to develop its elegance, before bringing it to bottling strength with spring water. The result is a grappa produced in limited quantities (fewer than three hundred bottles) yet defined by the clean, pure character we sought.
