The left knife is a Sakai Hidegaku (堺秀岳) Nakiri knife, a traditional Japanese vegetable knife designed for precise cutting of vegetables. The blade shows the characteristics of classic Japanese kitchen knife craftsmanship, with a wide blade profile suitable for clean and efficient preparation.

The right knife is a Registered Minoru Special (登録みのる特製) Yanagiba knife, with the Minoru (みのる / 馬印) registered mark engraved on the blade and the same mark burned into the wooden handle.
