Brasserie Cantillon

Le Plaisir is a rare and expressive collaboration between the legendary Brasserie Cantillon, the Italian natural wine estate Cascina degli Ulivi, and Callon, bringing together the worlds of spontaneous fermentation and natural winemaking.

This unique blend combines 2-year-old lambic with a complex assemblage of nine different grape pomaces, each of which underwent an extended 9-month skin maceration before blending. The result is a deeply layered hybrid creation, sitting at the intersection of beer and natural wine.

Concept & production

The base lambic is brewed and aged at Cantillon using spontaneous fermentation, relying entirely on wild yeasts and the microflora of Brussels. It is then blended with vinous elements derived from multiple grape varieties, creating a composition that is both experimental and highly expressive.

The addition of grape pomace (approx. 300 g/L) brings structure, tannic grip, and aromatic depth, while the lambic provides acidity, freshness, and earthy complexity.
