Vintage Japanese Yanagiba & Sushi-Kiri Knife Set – "Toshi (東枝)" Sushi Knife – Former Professional Sushi Restaurant Knives

An attractive pair of authentic vintage Japanese kitchen knives consisting of a traditional Yanagiba (sashimi knife) and a Sushi-Kiri (sushi-cutting knife).

These knives were formerly used in a professional sushi restaurant and display the honest wear expected from tools that faithfully served skilled craftsmen over many years. Their natural patina and sharpening marks reflect authentic working history, adding to their appeal as genuine vintage Japanese kitchen knives.

The Sushi-Kiri bears the maker's mark "東枝" (Toshi).

The Yanagiba no longer has a visible maker's mark. Considering the repeated sharpening during many years of professional use, it is highly likely that the original signature gradually wore away over time.

The Yanagiba is designed for producing exceptionally clean slices of sashimi and sushi toppings using long drawing cuts, while the broad Sushi-Kiri is specially designed for cutting sushi rolls and pressed sushi cleanly without crushing delicate ingredients.
