The Sushi-Kiri measures approximately 39 cm in overall length, making it a substantial professional-size knife. Such large traditional Sushi-Kiri knives have become increasingly difficult to find, making this an appealing set for collectors and enthusiasts of authentic Japanese cutlery.

The Sushi-Kiri was traditionally designed for cleanly cutting sushi rolls and pressed sushi with its broad, straight blade, while the compact Ko-Deba is intended for preparing small fish and carrying out precise kitchen work.
