Vintage Japanese Usuba & Deba Knife Set with Professional Wooden Sayas – Sakura Mark Masayoshi (サクラ印 正義) / Kashiwagi (柏木)

A very attractive set of two vintage Japanese kitchen knives, consisting of a traditional Usuba vegetable knife and Deba fish knife, accompanied by their fitted professional-style wooden blade covers (saya).

Both knives bear the maker's inscription "Sakura Mark Masayoshi" (サクラ印 正義) and are also marked "Kashiwagi" (柏木).

The inclusion of individual fitted wooden sayas makes this set particularly appealing. Wooden blade covers have traditionally been used for the safe storage and transportation of Japanese kitchen knives, especially in professional culinary environments.

1. Usuba – Sakura Mark Masayoshi / Kashiwagi

The Usuba features the characteristic tall, rectangular blade associated with traditional Japanese vegetable preparation.

Its broad blade and straight cutting profile are designed for precise vegetable work and are representative of the specialized knife forms developed within Japanese cuisine.

Approximate dimensions:

Overall length: 31.5 cm
Blade length: 17.5 cm
Includes fitted wooden saya
2. Deba – Sakura Mark Masayoshi / Kashiwagi

The smaller Deba has the robust blade profile traditionally used in Japanese kitchens for preparing and breaking down fish.

Despite its compact dimensions, it retains the substantial blade geometry characteristic of the Deba form and complements the Usuba very well as a traditional Japanese kitchen knife set.

Approximate dimensions:

Overall length: 24 cm
Blade length: 12 cm
Includes fitted wooden saya
Inscriptions / Markings

Both knives are marked:

サクラ印 正義 – "Sakura Mark Masayoshi"

and

柏木 – "Kashiwagi"

The combination of traditional Japanese knife forms, identifiable markings, wooden handles, and fitted wooden sayas gives the set considerable character and makes it interesting both as functional vintage cutlery and as a collectible example of Japanese kitchen knife culture.
