Vintage Japanese Yanagiba & Deba Kitchen Knife Set – Utasada Kiya (歌貞木屋) / Tomoharu Jōsaku (知春上作) – Traditional Japanese Knives
A fine set of two vintage Japanese kitchen knives, consisting of a traditional Yanagiba and Deba, both bearing clearly engraved Japanese maker inscriptions.
The combination of the long, slender Yanagiba and the substantial Deba represents two of the most characteristic blade forms in traditional Japanese fish preparation. Both knives retain traditional Japanese-style wooden handles and show the authentic character and patina developed through years of actual use.
1. Yanagiba – 歌貞木屋 (Utasada Kiya)
The blade is engraved:
歌貞木屋 – "Utasada Kiya"
The Yanagiba is distinguished by its long and narrow blade profile, traditionally designed for smooth drawing cuts when slicing fish and other ingredients requiring precision.
Its elegant proportions and traditional wooden handle give it the unmistakable appearance of a classic Japanese slicing knife.
Approximate dimensions:
Overall length: 34 cm
Blade length: 21 cm
2. Deba – 知春上作 (Tomoharu Jōsaku)
The Deba bears the inscription:
知春上作 – "Tomoharu Jōsaku"
The term 上作 (Jōsaku) is traditionally used as an indication of superior or higher-grade workmanship.
The knife has the broad, substantial blade profile characteristic of a Japanese Deba, a traditional knife developed primarily for fish preparation and heavier cutting tasks associated with Japanese cuisine.
Approximate dimensions:
Overall length: 31 cm
Blade length: 17 cm
Traditional Japanese Craftsmanship
This pair provides an attractive contrast between the elegant, elongated form of the Yanagiba and the broad, powerful profile of the Deba.
Both knives retain their engraved Japanese inscriptions, traditional wooden handles and visible traces of long-term use. These characteristics give the set an authentic vintage appearance that cannot be reproduced by modern unused knives.
They would make an interesting addition to a collection of traditional Japanese cutlery, or a worthwhile restoration and sharpening project for an experienced enthusiast.
