Description from the seller
HERMITAGE 2015 - YANN CHAVE
The Domaine Yann Chave is located in the municipality of Mercurol and extends over 18 hectares within the Crozes-Hermitage and Hermitage appellations. Yann Chave, whom his parents wanted to pull away from the peasant community by pushing him to do long studies, quickly returned to the family estate in 1996, abandoning a career in the bank to live from his passion for wine. After being poisoned by an insecticide treatment, he sought an alternative path and turned to organic farming in the early 2000s. The estate was certified in 2007. The wines of the estate have reached a high level, they exude a lot of personality and mark a beautiful interpretation of the terroir, especially on its unique hectare planted on the mythical hill of the Hermitage.
About the vintage
The Hermitage represents only 1.2 ha of the property. These 25-year-old vineyards are located in Beaume and Péléat, on a southwest-facing loess soil. Vinification is distinguished from Crozes-Hermitage by a longer fermentation (3 to 4 weeks). It is carried out in the gentlest way possible, with temperatures not exceeding 28°C. After destemming, the wines are put into new demi-muids and undergo their malolactic fermentation there. Aging in these containers will last a year, which is well suited to the syrah since the wine is not excessively woody. After this aging phase, the wines remain in the tank for another six months in order to settle naturally before bottling.
