THE VINTAGE

The Hermitage represents only 1.2 ha of the estate. These 25-year-old vines are located in Beaume and Péléat, on a southwest-facing loess slope. Vinification differs from Crozes-Hermitage by a longer fermentation (3 to 4 weeks). It is carried out in the gentlest possible way, with temperatures not exceeding 28°C. After decuvage, the wines are transferred into new half-muids, where they will undergo malolactic fermentation. Aging in these containers will last a year, which is well suited to the syrah since the wine is not excessively woody.
