Japanese Kitchen Knife
Type of knife: Deba
Size (longest part): 33 × 5 cm
Blade length: 18 cm
Weight: 483 g
Japanese kitchen knives are characterized by their razor-sharp cutting edge and durability, made possible by the same techniques used in crafting Japanese swords. Their quality is highly regarded throughout the world.
The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved at the Shōsōin in Nara. As kitchen knives were consumable items that were used while being sharpened, very few old examples survive; however, it is believed that they existed even before the Nara period. These ancient kitchen knives had a shape similar to that of Japanese swords and are characterized by their exceptionally long handles.
It is said that kitchen knives closely resembling the modern Deba, Yanagiba, and Nakiri styles were perfected during the mid-to-late Edo period.
The Edo period was an era of social stability in which Japanese culture flourished greatly. Alongside this, a diverse food culture blossomed, and the tools suited to each style of cooking developed accordingly.
