Japanese Kitchen Knife

Maker: 関孫六 Seki Magoroku, 忠房 Tadafusa

Type: 出刃 Deba

Size (longest part): 29 × 5.5 cm

Blade length: 16 cm

Weight: 703 g

Japanese kitchen knives are renowned for their exceptional sharpness and durability, made possible by techniques derived from Japanese sword-making. Their quality is highly regarded worldwide.

The oldest surviving Japanese kitchen knife dates from the Nara period and is preserved in the Shōsōin repository in Nara. As knives were consumable items used and worn down through sharpening, very few ancient examples survive; however, it is believed that they existed even before the Nara period. These ancient knives share a similar shape to Japanese swords and are characterized by their exceptionally long handles.

It is said that kitchen knives closely resembling the modern Deba, Yanagiba, and Nakiri styles were perfected during the mid-to-late Edo period.

The Edo period was an era of social stability and significant development of Japanese culture. Alongside this, a rich variety of culinary cultures flourished, and the tools suited to each style of cooking evolved accordingly.
