Yeast and sugar are added to the base wine, which is then bottled and sealed with a crown cap. The bottles are stacked horizontally and left to rest for over 36 months, during which the wine undergoes a slow, steady secondary fermentation.
Alc.: 12.5%
An elegant and vertical 100% Pinot Noir. Very pale straw yellow with orange hues, featuring a moderately fine perlage. The nose offers notes of yellow plum, Golden Delicious apple, papaya, citron, and bergamot. Among the floral aromas, jasmine stands out, followed by chamomile, hawthorn, and white rose. There is a chalky minerality alongside classic hints of bread crust and yeast. The retro-olfactory profile reveals sage and wild calamint. On the palate, it is fresh and savory, with an extremely pleasant effervescence. Subsequently, yeast and sugar are added to the base wine, which is then bottled and sealed with a crown cap. The bottles are stacked horizontally and left to rest for over 36 months, during which the wine undergoes a slow, steady secondary fermentation. Approximately 45 months after the harvest, the sediment accumulated in the bottle is removed via remuage (riddling) and dégorgement (disgorgement), and the bottle is topped up with liqueur d’expédition.
