Vintage Japanese All-Purpose & Small Nakiri Knife Set – “Betsuuchi” & “Tokusei” Markings – Traditional Japanese Kitchen Knives
An interesting pair of vintage Japanese kitchen knives, consisting of a traditional Japanese all-purpose knife and a compact small Nakiri vegetable knife.
Although the makers of both knives are unidentified, each retains an original Japanese inscription on the reverse side of the blade: the larger all-purpose knife is marked “別打” (Betsuuchi), while the smaller Nakiri is marked “特製” (Tokusei / Specially Made).
The two knives offer distinctly different blade profiles and proportions. The larger knife has a versatile pointed profile, while the smaller knife has the broad, rectangular form characteristic of a Japanese Nakiri.
Both are fitted with traditional wooden Wa handles and black ferrules, giving the pair the classic appearance of older Japanese working kitchen knives.
1. Japanese All-Purpose Knife – “Betsuuchi” (別打) – Maker Unknown
The knife on the left is a vintage Japanese all-purpose kitchen knife, featuring a relatively broad blade, gently curved cutting profile and distinctive raised tip.
Its combination of blade height and pointed profile gives it a versatile form suitable for a variety of general kitchen preparation tasks.
The maker cannot be identified with confidence; however, the reverse side of the blade bears the inscription:
別打 – Betsuuchi
For accuracy, the knife is therefore described as:
Maker: Unknown / Reverse inscription: Betsuuchi (別打)
Rather than attributing the knife to an unsupported maker or workshop, the surviving Japanese inscription is presented exactly as found.
The knife is fitted with a traditional wooden Wa handle and glossy black ferrule.
Approximate dimensions:
- Overall length: approx. 31 cm
- Blade length: approx. 17 cm
- Maximum blade width: approx. 4.7 cm
2. Small Nakiri Vegetable Knife – “Tokusei” (特製) – Maker Unknown
The knife on the right is an unusually compact small Nakiri-style vegetable knife.
Its short, broad and predominantly rectangular blade provides a clear contrast to the longer, pointed profile of the all-purpose knife.
The maker is unidentified, but the reverse side bears the inscription:
特製 – Tokusei / Specially Made
It is therefore accurately described as:
Maker: Unknown / Reverse inscription: Tokusei (特製)
The compact proportions are particularly interesting, presenting the familiar broad Nakiri form in a much smaller size.
Like the larger knife, it retains a traditional wooden Wa handle and black ferrule.
Approximate dimensions:
- Overall length: approx. 25.5 cm
- Blade length: approx. 12 cm
- Maximum blade width: approx. 4.2 cm
All measurements are approximate and have been estimated from the measuring tape visible in the photograph. Slight variations should be expected.
Two Distinctive Vintage Japanese Knife Forms
A particularly appealing feature of this lot is the contrast between the two knives.
The larger all-purpose knife combines a relatively broad blade with a pointed profile, while the small Nakiri has a compact, tall and almost rectangular blade.
Despite their different proportions, both retain traditional Japanese Wa handles and original Japanese blade markings. The “Betsuuchi” (別打) and “Tokusei” (特製) inscriptions also provide interesting surviving details from their original manufacture, even though the actual makers remain unidentified.
Together, they form an appealing pair for anyone interested in the variety of shapes found among older Japanese kitchen knives.
Condition
These are genuine vintage, pre-owned Japanese kitchen knives and show clear signs of age and previous use.
Please note the following condition issues:
- Age-related dirt and staining
- Scratches and scuff marks
- Rust / oxidation
- Wear from previous use and sharpening
- Chips and imperfections along the cutting edges
- Chipping / damage to the blade tips
- Scratches and dirt around the ferrules
- Dirt and signs of use on the wooden handles
- Other age- and use-related imperfections
The knives have not been fully cleaned, polished, restored or professionally sharpened and are offered in their present vintage condition.
Please examine all photographs carefully before bidding. The photographs form an essential part of the description and show the actual condition of the knives.
These are not fully restored or maintenance-free modern kitchen knives. Depending on their intended use, cleaning, sharpening, adjustment and other maintenance or restoration may be required.
Please bid only if you fully understand and accept the vintage condition and are capable of performing the necessary cleaning and sharpening yourself.
With their contrasting blade shapes, traditional wooden Wa handles and surviving “Betsuuchi” (別打) and “Tokusei” (特製) inscriptions, this is an interesting pair for collectors of vintage Japanese cutlery, sharpening and restoration enthusiasts, and admirers of traditional Japanese culinary tools.
