Vintage: 2020
Format: 75 cl (0.75 L)
Designation: Chianti Classico DOCG (Denominazione di Origine Controllata e Garantita)
Certification: Organic Wine (ICEA Certified)
Producer: Bottled at the origin by Soc. Agr. Dievole SPA (Castelnuovo Berardenga - Siena, Tuscany, Italy)
Group/Owner: Alejandro Bulgheroni Family Vineyards
Grapes: Predominantly Sangiovese with small percentages of native Tuscan varieties (Canaiolo and Colorino)
Alcohol content: 14% vol.
Sensory profile according to organoleptic evaluation
Visual examination: Deep, bright ruby red with violet reflections typical of the youthful Sangiovese.
Olfactory examination: Fresh, elegant, and territorial. Aromas of ripe red fruits such as cherries, marasca, and violet, with a delicate balsamic note and a touch of light spices derived from aging in large oak barrels.
Taste examination: On the palate it is dynamic, balanced, and well-structured. A pronounced acidity typical of the region provides freshness, supported by fine tannins and a long, savory, and persistent finish.
Food pairings
Sliced wild boar and red meat grilled cuts, Florentine steak
First courses of Tuscan cuisine (pappardelle with wild boar ragù or hare)
Tuscan cured meats and cold cuts (finocchiona, Tuscan prosciutto)
Medium- to long-aged cheeses (Pecorino Toscano DOP)
Serving
Glass: Medium-bodied red wine glass / Chianti Classico glass.
Serving temperature: 16 - 18 °C
Curiosities about the winery and producer
A millennial history: The name "Dievole" first appears in a lease contract dated 1090. Literally meaning "God willing," the estate is a historic place with almost a thousand years of winemaking tradition.
Biological philosophy and terroir: Dievole is located in the municipality of Castelnuovo Berardenga, in the southern part of the Chianti Classico area. The estate has fully converted its vineyards to organic farming and uses large French oak casks of 41 hl for aging, preserving the pure, varietal expression of Sangiovese.
