Vintage Japanese Nakiri & Ko-Deba Knife Set – “Registered Minamoto Kenko (登録源研光)” & “Betsuuchi (別打)” – Traditional Japanese Kitchen Knives
An attractive and characterful pair of vintage Japanese kitchen knives, consisting of a substantial traditional Nakiri vegetable knife and a compact Ko-Deba (small Deba) knife.
The larger Nakiri bears the inscription “登録源研光”, with an additional “特製” (Tokusei / Specially Made) marking on the reverse side. A surviving “手づくり” (Handmade) label is also attached around the ferrule area.
The smaller Ko-Deba has an unidentified maker but bears the Japanese inscription “別打” (Betsuuchi) on the reverse side of the blade.
With their contrasting blade profiles, traditional wooden Wa handles, surviving Japanese markings and visible traces of long-term use, these two knives have considerable vintage character.
1. Nakiri Vegetable Knife – “Registered Minamoto Kenko” (登録源研光)
The knife on the left is a substantial traditional Japanese Nakiri, immediately recognizable by its tall, broad and almost rectangular blade.
Its generous blade height and broad cutting surface give it the characteristic profile traditionally associated with Japanese vegetable preparation.
The blade bears the inscription:
登録源研光
Registered Minamoto Kenko
The reverse side is additionally marked:
特製 – Tokusei / Specially Made
Around the black ferrule, the knife also retains a small label reading:
手づくり – Handmade
The combination of the principal blade inscription, additional reverse-side marking and surviving ferrule label makes this knife particularly interesting as a vintage Japanese kitchen tool.
The blade shows a distinctive contrast between the darker upper surface and the brighter sharpened area toward the cutting edge, contributing to its well-used vintage appearance.
It is fitted with a traditional wooden Wa handle and black ferrule.
Approximate dimensions:
- Overall length: approx. 31.5 cm
- Blade length: approx. 18 cm
- Maximum blade width: approx. 5.5 cm
2. Ko-Deba / Small Deba Knife – “Betsuuchi” (別打) – Maker Unknown
The knife on the right is a compact Japanese Ko-Deba (small Deba).
Its short, pointed and substantial blade provides a strong visual contrast with the broad rectangular Nakiri and represents a compact form within the traditional Deba-style family of Japanese kitchen knives.
The maker cannot be identified with confidence. However, the reverse side of the blade bears the inscription:
別打 – Betsuuchi
For accuracy, it is therefore described as:
Maker: Unknown / Reverse inscription: Betsuuchi (別打)
No unsupported attribution to a particular maker or workshop has been made.
The knife is fitted with a traditional light-colored wooden Wa handle and black ferrule. Its compact proportions make it an interesting companion to the considerably larger Nakiri.
Approximate dimensions:
- Overall length: approx. 25.5 cm
- Blade length: approx. 12 cm
- Maximum blade width: approx. 3.5 cm
All measurements are approximate and have been estimated from the measuring tape visible in the photograph. Slight variations should be expected.
An Interesting Pair of Contrasting Japanese Knife Forms
One of the strongest features of this lot is the contrast between the two knives.
The Nakiri has a tall, broad and nearly rectangular blade, while the compact Ko-Deba has a short and pointed profile. Together, they illustrate two distinctly different forms found in traditional Japanese kitchen cutlery.
The Nakiri is particularly noteworthy for retaining several identifying details: the “登録源研光” blade inscription, “特製” marking on the reverse and “手づくり” label around the ferrule.
The smaller knife remains unidentified by maker, but its surviving “別打” inscription provides another original Japanese marking.
For collectors and restoration enthusiasts, these inscriptions and surviving details add interest beyond the contrasting blade shapes themselves.
Condition
These are genuine vintage, pre-owned Japanese kitchen knives and show clear signs of age and previous use.
Please note the following condition issues:
- Age-related dirt and staining
- Scratches and scuff marks on the blades
- Wear from previous use and sharpening
- Chips and imperfections along the cutting edges
- Chipping / damage to the blade tips
- Dirt and scratches around the ferrules
- Dirt and signs of use on the wooden handles
- Other age- and use-related imperfections
The knives have not been fully cleaned, polished, restored or professionally sharpened and are offered in their present vintage condition.
Please examine all photographs carefully before bidding. The photographs form an essential part of the description and show the actual condition of the knives.
These are not fully restored or maintenance-free modern kitchen knives. Depending on their intended use and the buyer's preferences, cleaning, sharpening, adjustment or other maintenance and restoration work may be required.
Please bid only if you fully understand and accept the vintage condition and are capable of performing the necessary cleaning and sharpening yourself.
With the substantial Nakiri carrying “登録源研光”, “特製” and “手づくり” markings, together with the compact Ko-Deba bearing a “別打” inscription, this is an appealing pair for collectors of vintage Japanese cutlery, sharpening and restoration enthusiasts, and admirers of traditional Japanese culinary tools.
