About the vintage

The Syrah that composes this vintage was cultivated manually on steep south-facing slopes, a vine acquired by the winemaker in 2007. Once the harvest is done by hand, the berries macerate cold, at 12 degrees, for a week. Then they undergo fermentation with only native yeasts, and are pigeaged twice a day (morning and evening). The wine is then aged for about a year in oak barrels without new wood, in order to preserve fruit aromas. At bottling, the wine is fined to clarify and refine it.

We discover a nectar with an extremely complex deep black color with aromas of black fruits and spices. The wine is dense and deep, enhanced by a beautiful mineral texture. Its tannins, present, are fine and harmonious. Vincent Paris signs a beautiful vintage to be enjoyed with bavette with shallots and its potato gratin, or a pork tenderloin with porcini mushrooms.
