Vintage Japanese Yanagiba & Nakiri Knife Set – “Registered Katsuhiro (登録克弘)” & Unidentified Maker – Traditional Japanese Kitchen Knives
Offered here is an attractive pair of vintage Japanese kitchen knives, combining two distinctly different traditional blade forms: a long and slender Yanagiba and a broad, characterful Nakiri vegetable knife with a dark, traditional-looking blade finish.
The Yanagiba on the left bears the clearly visible inscription “登録克弘” (Registered Katsuhiro) and retains traces of an old label on its wooden handle.
The Nakiri on the right has no maker's inscription that can be reliably identified. Rather than making an unsupported attribution, it is therefore listed as maker unknown / unidentified.
The contrast between the elegant Yanagiba and the broad, dark-finished Nakiri, together with their traditional wooden Wa handles and extensive traces of previous use, gives this pair considerable vintage Japanese character.
1. Yanagiba – “Registered Katsuhiro” (登録克弘)
The knife on the left is a traditional Japanese Yanagiba, characterized by its long, narrow blade and pointed tip.
The Yanagiba is one of the classic Japanese knife forms associated with the preparation and slicing of fish. Its elongated profile is designed for long, smooth drawing cuts, making this style particularly recognizable among traditional Japanese kitchen knives.
The blade bears the clearly visible inscription:
登録
克弘
Registered Katsuhiro
The 登録克弘 marking is also known from other surviving vintage Japanese kitchen knives. カタウィキ
The knife is fitted with a dark-colored traditional wooden Wa handle and black ferrule. Traces of an old label remain on the handle, adding to its visibly aged character, although the original wording is no longer sufficiently clear to identify with confidence.
Approximate dimensions:
- Overall length: approx. 34 cm
- Blade length: approx. 21 cm
- Maximum blade width: approx. 2.8 cm
2. Nakiri Vegetable Knife – Unidentified Maker
The knife on the right is a traditional Japanese Nakiri, immediately recognizable by its tall, broad and almost rectangular blade.
Its wide blade and relatively straight cutting edge represent the characteristic form of the Japanese vegetable knife.
A particularly attractive visual feature is the dark surface remaining across much of the blade, contrasting strongly with the brighter, sharpened area along the cutting edge. This gives the knife a distinctly traditional and rustic appearance.
No maker's inscription can be reliably identified on this example. It is therefore accurately described as:
Maker / inscription: Unidentified
No attempt has been made to attribute the knife to a particular maker, workshop or region without supporting evidence.
The knife is fitted with a light-colored traditional wooden Wa handle and a copper-colored metal ferrule, creating an attractive contrast with the dark blade surface.
Approximate dimensions:
- Overall length: approx. 30 cm
- Blade length: approx. 17 cm
- Maximum blade width: approx. 5.2 cm
Please note: All measurements are approximate estimates based on the measuring tape visible in the photograph. Slight differences from actual measurements should be expected.
Two Distinctive Traditional Japanese Knife Forms
This lot combines two very different Japanese blade profiles.
The approximately 21 cm Registered Katsuhiro Yanagiba has a long, slender and pointed profile associated with precise slicing, while the approximately 17 cm Nakiri has the tall, broad profile traditionally associated with vegetable preparation.
Their appearance is equally contrasting:
Yanagiba
- Signed “登録克弘”
- Long and slender blade
- Dark wooden Wa handle
- Black ferrule
- Remains of an old handle label
Nakiri
- Maker unidentified
- Broad, tall blade
- Distinctive dark blade surface
- Light-colored wooden Wa handle
- Copper-colored metal ferrule
Rather than being cosmetically restored to conceal their age, both knives retain the visible traces accumulated through previous use. This makes the set particularly suitable for collectors and enthusiasts who appreciate the character of older Japanese working knives.
Condition
These are vintage, pre-owned Japanese kitchen knives and show substantial signs of age and previous use.
Condition includes:
- Age-related dirt and staining
- Rust / oxidation
- Scratches, rubbing marks and scuffs on the blades
- Chipping / damage to the blade tips
- Chips and imperfections along the cutting edges
- Wear from age and previous use
- Dirt and scratches around the ferrules
- Dents and misalignment around the ferrule areas
- Dirt and scratches on the wooden handles
- Remains / deterioration of the old label on the Yanagiba handle
- Other age- and use-related imperfections
The knives have not been fully cleaned, polished, restored or professionally sharpened and are offered in their present vintage condition.
Please examine all photographs carefully before bidding. The photographs form an essential part of the description and show the actual condition of the blades, cutting edges, tips, ferrules, wooden handles, inscription and remaining label.
These are vintage working knives rather than fully restored or maintenance-free modern kitchen knives. Depending on their present condition and intended use, cleaning, rust removal, sharpening, adjustment or repair of the ferrule/handle areas, and other restoration work may be required.
Please bid only if you fully understand and accept the vintage condition—including dirt, rust, scratches, tip damage, edge chipping, wear, ferrule dents and misalignment, and handle wear—and are capable of carrying out the necessary cleaning, sharpening and repair/restoration yourself.
With the signed “Registered Katsuhiro (登録克弘)” Yanagiba and the broad, dark-finished Nakiri of unidentified maker, this is an appealing pair for collectors of vintage Japanese cutlery, sharpening and restoration enthusiasts, and admirers of traditional Japanese culinary tools.
