Grapes: Traditionally dried Corvina, Corvinone, Rondinella and Croatina
Alcohol content: 16% vol.
Organoleptic profile
Visual appearance: Deep, intense ruby red with garnet reflections of great brilliance.
Olfactory examination: Explosive, complex and elegant. Opens with pronounced notes of cherry jam, prunes, amarena in liqueur and dried plum, followed by refined hints of dark chocolate, cacao, roasted coffee, tobacco and sweet spices.
Taste: On the palate it is powerful, warm and balsamic. The structure is imposing yet supported by velvety tannins and an extraordinary mineral freshness that balances the alcohol level, delivering a lingering finish.
Food pairings
Great game and wildfowl dishes (wild boar, roe deer)
Braised and Amarone-style stews, pot-roasts
Extra-aged cheeses (e.g., Parmigiano Reggiano over 36 months) and complex blue cheeses (spicy Gorgonzola)
Also perfect as a contemplative “meditation wine” after the meal
Service
Glass used: Wide, large red wine balloon-type glass (Balon style) suitable for big red wines.
Serving temperature: 18–20 °C (it is advisable to uncork 1–2 hours before serving).
Curiosities about the winery and producer
A Tribute to the Origins: This wine represents the homage that his children Igino, Gian Franco and Anna Maria wanted to dedicate to their father Pietro Dal Cero, founder of the modern winery and originally from Valpolicella (Luxinum/Tregnago), before the family moved to Sirmione on Lake Garda.
Prolonged Maturation: Produced only in the best vintages from vineyards in the municipality of Tregnago, Pietro Dal Cero Amarone undergoes a long withering process of the grapes of over 4 months, followed by 24 months of maturation in wooden casks and a long bottle rest thereafter.
