Il Barbaresco Riserva “Spezie” di Vite Colte è un rosso che esprime tutto il prestigio della sua denominazione ed è dotato di grande eleganza e fascino dal notevole potenziale evolutivo. Vite colte è una cantina cooperativa piemontese nata nel 1980, che raccoglie ad oggi circa 180 viticoltori locali che possiedono vigne nelle Langhe o in Monferrato. L'intento, nato dall'idea di valorizzare un territorio che non sempre ha goduto della fama attuale, perseguendo da sempre una produzione votata alla qualità e al rispetto ambientale, tanto che la maggior parte dei conferitori di uve lavora in regime biologico o in lotta integrata. Ad oggi Vite Colte è un nome che ha risonanza internazionale, non solo per la dimensione corale del progetto, ma anche per il livello qualitativo raggiunto dei vini, sempre in crescendo e a prezzi davvero accessibili. Realtà da scoprire.
Il rosso Barbaresco Riserva “Spezie” è ottenuto come da disciplinare da uve Nebbiolo in purezza, coltivate nel comune di Barbaresco e siti a circa 200-280 metri s.l.m. su terreni di matrice marnosa e con forte presenza d'argilla. Dopo una cernita dei migliori grappoli atti a dare vita a questa riserva, si procede con fermentazione alcolica di circa 20 giorni a una temperatura di 28-30° C. Dopo la fermentazione malolattica, il liquido affina in piccole botti di legno di rovere per almeno due anni. Ulteriore sosta di un anno in bottiglia prima della messa in commercio.
